🥞 Moroccan Msemen – Flaky Layered Flatbread



Description:
Msemen (Meloui) is a traditional Moroccan flaky flatbread, crispy on the outside and soft on the inside. Perfect for breakfast, tea, or stuffed with honey, butter, or savory fillings.


Ingredients

For the Dough:

  • 3 cups all-purpose flour

  • 1 cup fine semolina

  • 1 tsp salt

  • 1 tsp sugar

  • 1 tbsp instant yeast (optional for fluffier msemen)

  • 1 ½ cups warm water (approx., adjust as needed)

  • 2–3 tbsp vegetable oil (for kneading and folding)

For Cooking:

  • Vegetable oil or melted butter for frying


Instructions

1️⃣ Prepare the Dough

  1. In a large bowl, mix flour, semolina, salt, sugar, and yeast.

  2. Gradually add warm water and knead until smooth and elastic (about 10 minutes).

  3. Cover and let rest 30–60 minutes.


2️⃣ Shape the Msemen

  1. Divide the dough into small balls (about the size of a golf ball).

  2. Grease your hands with oil and flatten each ball into a thin square or circle.

  3. Fold the edges inward to form layers (fold into a square, then flatten slightly).


3️⃣ Cook the Msemen

  1. Heat a non-stick skillet or griddle over medium heat.

  2. Add a small amount of oil or butter.

  3. Cook each msemen 2–3 minutes per side until golden and crispy.

  4. Repeat with remaining dough.


4️⃣ Serve

  • Serve warm with honey, butter, jam, or cheese.

  • Can also be used to wrap savory fillings like minced meat or vegetables.


Tips:

  • For extra flaky layers, roll each square thinly and generously oil your hands before folding.

  • Store in an airtight container; reheat in a skillet to restore crispiness
