🥞 Moroccan Msemen – Flaky Layered Flatbread
Description:
Msemen (Meloui) is a traditional Moroccan flaky flatbread, crispy on the outside and soft on the inside. Perfect for breakfast, tea, or stuffed with honey, butter, or savory fillings.
Ingredients
For the Dough:
-
3 cups all-purpose flour
-
1 cup fine semolina
-
1 tsp salt
-
1 tsp sugar
-
1 tbsp instant yeast (optional for fluffier msemen)
-
1 ½ cups warm water (approx., adjust as needed)
-
2–3 tbsp vegetable oil (for kneading and folding)
For Cooking:
-
Vegetable oil or melted butter for frying
Instructions
1️⃣ Prepare the Dough
-
In a large bowl, mix flour, semolina, salt, sugar, and yeast.
-
Gradually add warm water and knead until smooth and elastic (about 10 minutes).
-
Cover and let rest 30–60 minutes.
2️⃣ Shape the Msemen
-
Divide the dough into small balls (about the size of a golf ball).
-
Grease your hands with oil and flatten each ball into a thin square or circle.
-
Fold the edges inward to form layers (fold into a square, then flatten slightly).
3️⃣ Cook the Msemen
-
Heat a non-stick skillet or griddle over medium heat.
-
Add a small amount of oil or butter.
-
Cook each msemen 2–3 minutes per side until golden and crispy.
-
Repeat with remaining dough.
4️⃣ Serve
-
Serve warm with honey, butter, jam, or cheese.
-
Can also be used to wrap savory fillings like minced meat or vegetables.
Tips:
-
For extra flaky layers, roll each square thinly and generously oil your hands before folding.
-
Store in an airtight container; reheat in a skillet to restore crispiness
