🥞 Baghrir – Moroccan “Thousand-Hole” Pancakes
Baghrir are traditional Moroccan semolina pancakes, famous for their soft texture and tiny holes, perfect for soaking up honey and butter. They are especially popular during Ramadan and breakfast.
🌾 Ingredients

2 cups fine semolina

1/2 cup all-purpose flour

2 1/2 teaspoons baking powder

1 teaspoon active dry yeast

1/2 teaspoon salt
-
2 1/2 cups warm water
-
1 teaspoon sugar
-
1 teaspoon vanilla or orange blossom water (optional)
👩🍳 Instructions
1️⃣ Activate yeast

In a small bowl, mix yeast, sugar, and a little warm water. Let sit 5–10 minutes until bubbly.
2️⃣ Mix dry ingredients

In a large bowl, combine semolina, flour, baking powder, and salt.
3️⃣ Combine

Add yeast mixture and the remaining warm water gradually.

Mix with a whisk or blender until smooth and slightly runny.

Let the batter rest 30–45 minutes in a warm place.
4️⃣ Cook pancakes

Heat a non-stick pan over medium heat (do not grease).

Pour a small ladle of batter into the pan.

Cook only on one side until the surface is full of holes and the top is dry.
5️⃣ Serve

Stack and drizzle with melted butter and honey. Serve warm
