🥮 Moroccan Almond Briouats (Sweet Almond Pastries)



Briouats with almonds are crispy Moroccan pastries filled with sweet almond paste, fried, then dipped in honey and sprinkled with sesame seeds.


Ingredients

For the almond filling:

  • 2 cups finely ground almonds

  • 3/4 cup powdered sugar

  • 1 teaspoon cinnamon

  • 2 tablespoons melted butter

  • 2–3 tablespoons orange blossom water

For shaping & frying:

  • Briouat sheets (warqa) or phyllo dough

  • Melted butter or oil (for folding)

  • Oil for frying

For finishing:

  • 1–2 cups honey

  • 1 tablespoon orange blossom water (to mix with honey)

  • Sesame seeds for garnish


Instructions

  1. Prepare the filling:
    In a bowl, mix ground almonds, powdered sugar, cinnamon, melted butter, and orange blossom water until a soft paste forms.

  2. Shape the filling:
    Form the almond paste into small log shapes (finger-sized).

  3. Cut the sheets:
    Cut warqa or phyllo dough into long strips.

  4. Fold the briouats:
    Place one almond log at the end of a strip. Fold into triangles (like a samosa), brushing edges with butter or oil to seal.

  5. Fry:
    Heat oil over medium heat and fry briouats until golden brown and crispy.

  6. Honey coating:
    Warm the honey with orange blossom water. Dip hot briouats directly into the honey for a few seconds.

  7. Garnish:
    Sprinkle with sesame seeds and let cool.
