🥣 Moroccan Sellou (Sfouf) – Ingredients & Method



Sellou is a traditional Moroccan sweet, especially prepared during Ramadan and special occasions.

Ingredients:

  • 1 kg all-purpose flour

  • 500 g sesame seeds, toasted and ground

  • 250 g almonds, toasted and ground

  • 250 g peanuts, toasted and ground (optional)

  • 200 g butter, melted

  • 1 cup honey

  • 1 cup powdered sugar

  • 2 tablespoons anise seeds, ground

  • 1 tablespoon cinnamon

  • A pinch of salt

  • 2 tablespoons flax seeds, ground (optional)

  • Whole sesame seeds or almonds for garnish

👩‍🍳 Method:

  1. Toast the flour in a large pan or oven over low heat, stirring until golden and fragrant. Let it cool.

  2. Toast the sesame seeds, clean them, then grind.

  3. Toast and grind the almonds (and peanuts if using).

  4. In a large bowl, mix the toasted flour with the ground sesame, almonds, peanuts, and spices.

  5. Add the powdered sugar and mix well.

  6. Gradually pour in the melted butter and honey while mixing.

  7. Knead and rub the mixture with your hands until fully combined and crumbly-soft.

  8. Shape on a serving plate and decorate with sesame seeds or almonds.
