🥥 Moroccan Coconut Snowball Cookies





Ingredients

  • 250 g shredded coconut (unsweetened)

  • 120 g powdered sugar

  • 2 large eggs

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • Zest of 1 lemon

  • 2 tbsp vegetable oil or melted butter

For Coating:

  • Powdered sugar or

  • Extra shredded coconut


Instructions

1️⃣ Prepare the Dough:

  1. Preheat oven to 180°C (350°F).

  2. In a large bowl, mix shredded coconut, powdered sugar, and baking powder.

  3. Add eggs, vanilla extract, lemon zest, and oil.

  4. Mix until a soft, slightly sticky dough forms.


2️⃣ Shape the Cookies:

  1. Lightly grease your hands.

  2. Form small balls (about walnut-sized).

  3. Place on a baking tray lined with parchment paper.


3️⃣ Bake:

  • Bake for 12–15 minutes until lightly golden on the bottom.

  • The tops should remain pale and soft.


4️⃣ Coat:

  • Let cookies cool slightly.

  • Roll in powdered sugar for a snowball effect
    or

  • Brush lightly with syrup and roll in coconut for a festive look.
