🥥 Moroccan Coconut Snowball Cookies
Ingredients

250 g shredded coconut (unsweetened)

120 g powdered sugar

2 large eggs
-
1 tsp baking powder
-
1 tsp vanilla extract
-
Zest of 1 lemon
-
2 tbsp vegetable oil or melted butter
For Coating:

Powdered sugar or
-
Extra shredded coconut
Instructions
1️⃣ Prepare the Dough:

Preheat oven to 180°C (350°F).

In a large bowl, mix shredded coconut, powdered sugar, and baking powder.

Add eggs, vanilla extract, lemon zest, and oil.

Mix until a soft, slightly sticky dough forms.
2️⃣ Shape the Cookies:

Lightly grease your hands.

Form small balls (about walnut-sized).

Place on a baking tray lined with parchment paper.
3️⃣ Bake:

Bake for 12–15 minutes until lightly golden on the bottom.

The tops should remain pale and soft.
4️⃣ Coat:

Let cookies cool slightly.

Roll in powdered sugar for a snowball effect

Brush lightly with syrup and roll in coconut for a festive look.
