🍪 Moroccan Fekkas (Almond Biscotti)
🧺 Ingredients

3 cups flour
-
1 cup sugar
-
3 eggs
-
½ cup vegetable oil
-
1 tsp baking powder
-
1 tsp vanilla sugar or vanilla extract

Pinch of salt
-
1 cup whole almonds (or mixed nuts), toasted

2 tbsp sesame seeds (optional)

Zest of 1 orange or lemon (optional)
👨🍳 Method
1️⃣ Prepare the dough

In a large bowl, beat eggs and sugar until well mixed.

Add oil and vanilla, mix again.

Stir in almonds, sesame seeds, and zest (if using).

Add flour, baking powder, and salt.

Mix to form a firm dough.
2️⃣ Shape

Divide dough into 2–3 long logs.

Place logs on a baking tray lined with parchment.

Flatten slightly with your hand.
3️⃣ First baking

Bake at 180°C (350°F) for about 20–25 minutes until lightly golden.

Remove from oven and let cool 10 minutes.
4️⃣ Slice & second baking

Cut logs into slices (about 1–1.5 cm thick).

Lay slices flat on the tray.

Bake again for 10–15 minutes, turning once, until dry and crisp.

You can replace almonds with peanuts, walnuts, or raisins.
