Msemen au Sucre (Moroccan Sweet Flatbread – مسمن بالسكر)




Ingredients:

  • 500g all-purpose flour

  • 100g fine semolina

  • 1 tsp salt

  • 300ml warm water (adjust as needed)

  • 50g melted butter or oil (for folding)

  • Granulated sugar for sprinkling

  • Optional: honey or cinnamon for serving

Instructions:

  1. Prepare the dough:

    • In a large bowl, mix flour, semolina, and salt.

    • Gradually add warm water and knead until a soft, pliable dough forms.

    • Cover and let rest for 15–20 minutes.

  2. Divide and roll:

    • Divide the dough into small balls (about the size of a golf ball).

    • Roll each ball into a thin square or rectangle on a lightly floured surface.

  3. Fold with butter/oil:

    • Spread a little melted butter or oil on the rolled dough.

    • Fold the dough into layers (square or rectangle), pressing lightly.

  4. Cook the Msemen:

    • Heat a non-stick pan or griddle over medium heat.

    • Cook each msemen for 2–3 minutes on each side until golden brown and slightly crispy.

  5. Add sugar:

    • Sprinkle granulated sugar on top while warm.

    • Optionally, drizzle with honey or dust with cinnamon.

  6. Serve:

    • Serve hot with Moroccan mint tea for breakfast or as a sweet snack.


💡 Tips:



  • The secret to a soft and flaky msemen is rolling thin and folding with butter or oil.

  • Can be prepared plain, with sugar, or with honey and cinnamon for extra sweetness.

  • Keeps well for a day in an airtight container; reheat lightly before serving.
