Msemen au Sucre (Moroccan Sweet Flatbread – مسمن بالسكر)
Ingredients:

500g all-purpose flour

100g fine semolina

1 tsp salt

300ml warm water (adjust as needed)

50g melted butter or oil (for folding)

Granulated sugar for sprinkling

Optional: honey or cinnamon for serving
Instructions:

Prepare the dough:

In a large bowl, mix flour, semolina, and salt.

Gradually add warm water and knead until a soft, pliable dough forms.

Cover and let rest for 15–20 minutes.

Divide and roll:

Divide the dough into small balls (about the size of a golf ball).

Roll each ball into a thin square or rectangle on a lightly floured surface.

Fold with butter/oil:

Spread a little melted butter or oil on the rolled dough.

Fold the dough into layers (square or rectangle), pressing lightly.

Cook the Msemen:

Heat a non-stick pan or griddle over medium heat.
-
Cook each msemen for 2–3 minutes on each side until golden brown and slightly crispy.

Add sugar:

Sprinkle granulated sugar on top while warm.

Optionally, drizzle with honey or dust with cinnamon.

Serve:

Serve hot with Moroccan mint tea for breakfast or as a sweet snack.
