Meskouta (Moroccan Cake – مسكوتة)
Ingredients:

250g all-purpose flour

200g sugar

4 eggs
-
100ml vegetable oil (or melted butter)

1 tsp baking powder

1 tsp vanilla extract
-
50ml milk
-
Optional: zest of 1 orange or lemon for flavor
Instructions:

Preheat oven:

Preheat your oven to 180°C (350°F).

Grease a baking pan with butter or line with parchment paper.

Beat eggs and sugar:

In a large bowl, beat the eggs and sugar until pale and fluffy (about 5 minutes).

Add oil and milk:

Gradually add oil, milk, and vanilla extract (and citrus zest if using) while mixing gently.

Incorporate dry ingredients:

Sift flour and baking powder together.
-
Fold into the egg mixture carefully until smooth and homogeneous.

Bake the cake:

Pour the batter into the prepared pan.

Bake at 180°C (350°F) for 25–30 minutes, or until a toothpick inserted comes out clean.

Cool and serve:

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

Slice and serve plain or dusted with powdered sugar.

Meskouta is often served with Moroccan mint tea for breakfast or afternoon snack.

For a richer flavor, you can add a small amount of orange blossom water or almond extract.

It keeps well for 2–3 days in an airtight container.
