Meskouta (Moroccan Cake – مسكوتة)



Ingredients:

  • 250g all-purpose flour

  • 200g sugar

  • 4 eggs

  • 100ml vegetable oil (or melted butter)

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 50ml milk

  • Optional: zest of 1 orange or lemon for flavor

Instructions:

  1. Preheat oven:

    • Preheat your oven to 180°C (350°F).

    • Grease a baking pan with butter or line with parchment paper.

  2. Beat eggs and sugar:

    • In a large bowl, beat the eggs and sugar until pale and fluffy (about 5 minutes).

  3. Add oil and milk:

    • Gradually add oil, milk, and vanilla extract (and citrus zest if using) while mixing gently.

  4. Incorporate dry ingredients:

    • Sift flour and baking powder together.

    • Fold into the egg mixture carefully until smooth and homogeneous.

  5. Bake the cake:

    • Pour the batter into the prepared pan.

    • Bake at 180°C (350°F) for 25–30 minutes, or until a toothpick inserted comes out clean.

  6. Cool and serve:

    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

    • Slice and serve plain or dusted with powdered sugar.


💡 Tips:



  • Meskouta is often served with Moroccan mint tea for breakfast or afternoon snack.

  • For a richer flavor, you can add a small amount of orange blossom water or almond extract.

  • It keeps well for 2–3 days in an airtight container.
