Richbond Cookies
Often called the "favorite of the masses," these are soft, melt-in-your-mouth cookies coated in apricot jam and coconut.
Ingredients:
3 eggs.
1 cup sugar.
1 cup oil.
125g soft butter.
8g baking powder.
Flour (as much as the mixture takes—roughly 500-600g to keep it soft).
For Decoration: Apricot jam (the liquid kind), 2 tbsp orange blossom water, and shredded coconut.
Instructions:
The Base: Cream the butter with sugar. Add eggs and oil, mixing until smooth.
The Dough: Gradually fold in the flour and baking powder until you have a soft, non-sticky dough.
Bake: Shape into very small balls (they will be sandwiched together). Bake until they are a very light golden color.
The Finish: Warm the jam with orange blossom water. Dip the warm cookies into the jam, let them soak for a minute, then stick two together and roll them generously in shredded coconut.
