🌸 Stuffed Date Cookies (Makrout Style – Wedding Version)
Makrout are traditional Moroccan semolina cookies filled with date paste, often served at weddings and special occasions. They can be baked or fried, then dipped in honey.
🌾 Ingredients
For the dough:

2 cups fine semolina

1/2 cup melted butter
-
Pinch of salt
-
1/3–1/2 cup warm water (as needed)

1 tablespoon orange blossom water
🌴 For the date filling:

1 cup soft date paste (pitted dates mashed)
-
1 tablespoon melted butter or oil
-
1/2 teaspoon cinnamon
-
1 tablespoon orange blossom water
🍯 For finishing:

1–2 cups honey
-
1 tablespoon orange blossom water

Sesame seeds (optional)
👩🍳 Instructions
1️⃣ Prepare the date filling

Mix date paste with butter, cinnamon, and orange blossom water.

Knead and shape into thin logs. Set aside.
2️⃣ Prepare the dough

In a bowl, mix semolina, salt, and melted butter.

Rub together well until sandy.
-
Add orange blossom water and warm water gradually until a soft dough forms.

Let rest 15 minutes.
3️⃣ Shape

Divide dough into portions and roll each into a log.

Make a channel in the center with your finger.
-
Place the date log inside and seal the dough over it.

Roll gently and flatten slightly.

Cut into diamonds or small rectangles.

Decorate tops with a fork or knife if desired.
4️⃣ Cook (choose one method)
Bake:
Bake at 180°C (350°F) for 20–25 minutes until lightly golden.
OR Fry:
Fry in medium oil until golden on both sides.
5️⃣ Honey finish

Warm the honey with orange blossom water.

Dip hot cookies into honey for a few seconds.
-
Sprinkle with sesame seeds if desired.
