🥞 Sweet Moroccan Mlaoui (Layered Sweet Pancake)

Mlaoui is a traditional Moroccan layered pastry, similar to Msemen but softer and flakier, often served sweet with honey or sugar at breakfast, tea time, or during Ramadan.

🌾 Ingredients

  • 2 cups all-purpose flour

  • 1 cup fine semolina

  • 1 teaspoon salt

  • 1 cup warm water (adjust as needed)

  • 4 tablespoons melted butter or vegetable oil (for dough)

  • Extra butter or oil for layering and folding

  • Honey, powdered sugar, or jam for serving

👩‍🍳 Instructions

1️⃣ Prepare the dough

  • In a large bowl, mix flour, semolina, and salt.

  • Gradually add warm water while kneading until you get a soft, elastic dough.

  • Cover and let rest 15–20 minutes.

2️⃣ Divide and flatten

  • Divide the dough into small balls (golf ball size).

  • Roll each ball into a thin, large circle.

3️⃣ Layering

  • Brush the surface with melted butter or oil.

  • Fold edges inward or roll to form layers, creating a spiral or square shape.

4️⃣ Cook

  • Heat a non-stick pan over medium heat.

  • Cook each Mlaoui 3–4 minutes per side until golden brown and slightly crispy.

5️⃣ Serve sweet

  • Serve warm with honey, powdered sugar, or jam
