🧁 Sweet Harcha (Moroccan Semolina Pan Cake for Breakfast)



Sweet Harcha is a traditional Moroccan semolina cake cooked in a pan, slightly crispy outside and soft inside. It’s popular for breakfast or Ramadan ftour.


🌾 Ingredients

  • 2 cups fine semolina

  • 1/2 cup sugar

  • 1/2 cup melted butter (or oil)

  • 1 cup milk (approx., adjust as needed)

  • 1 teaspoon baking powder

  • Pinch of salt

  • 1 teaspoon vanilla (optional)


👩‍🍳 Instructions

1️⃣ Mix dry ingredients
In a bowl, combine semolina, sugar, baking powder, and salt.

2️⃣ Add butter
Pour in melted butter and mix with your hands until the semolina absorbs the fat.

3️⃣ Add milk
Gradually add milk and vanilla, mixing gently until you get a soft, thick dough (not runny).

4️⃣ Shape
Form a round flat cake about 2 cm thick. Dust with semolina on both sides.

5️⃣ Cook
Heat a pan over low–medium heat.
Cook the harcha for about 5–7 minutes per side until golden.

6️⃣ Serve
Serve warm with butter, honey, or jam
