🥞 Sweet Moroccan Msemen (Layered Pan-Fried Pastry)
Sweet Msemen is a traditional Moroccan layered pastry, slightly crispy outside and soft inside, usually served with honey or sugar. It’s a favorite for breakfast, tea, and Ramadan.
🌾 Ingredients

2 cups all-purpose flour

1 cup fine semolina

1 teaspoon salt

1 cup warm water (approx., adjust as needed)

4 tablespoons melted butter or vegetable oil (for dough)

Extra butter or oil for folding

Honey or powdered sugar for serving

1️⃣ Make the dough

Mix flour, semolina, and salt in a large bowl.

Gradually add warm water and knead until a soft, elastic dough forms.

Cover and let rest 15–20 minutes.
2️⃣ Divide and flatten

Divide the dough into small balls (about the size of a golf ball).

Roll or stretch each ball into a thin, large square or rectangle.
3️⃣ Layering

Brush the surface lightly with melted butter or oil.

Fold the edges inward, creating a layered square or rectangle.

Repeat with all dough balls.
4️⃣ Cook

Heat a non-stick pan or skillet over medium heat.

Cook each Msemen 2–3 minutes per side until golden brown and slightly crispy.
5️⃣ Serve

Serve warm with honey, powdered sugar, or your favorite jam
